BAKED APPLE CHUNKS WITH WALNUTS
(We usually 4x this recipe for a 9x13" pan:)
2 apples, peeled and cut into bite size chunks
2 Tbsp. coconut oil
2 tsp. honey
1/2 cup walnuts (Sally Fallon's Crispy Nuts are especially good!)
1 tsp. cinnamon
1/2 tsp. ground nutmeg
pinch of salt
1. Heat oven to 375 F
2. Toss apple chunks with remaining ingredients, except walnuts.
3. Place in a covered casserole dish and bake for about 35-45 minutes or until tender.
4. Top with walnuts and bake 15 minutes more uncovered.
Delicious!!!

PS. :( No lawn mowing today... been painting on job with family. Thank the Lord Jesus, He held the rain though, and much was accomplished! Praise His Holy Name.
That truly sounds so delicious! There is nothing better than baking apples on a cool fall day...:)
