Pickled beets...

It seems like people either hate them, or love them.   Our family all loves them and so, one of the things I did when I got home from babysitting was to peel/cut up the large kettle of beets we'd cooked and to make a large potful of pickled beets.  I also ground up some apples into sauce using our Vita-Mix and got the apple juice and sauce in jars--ready to be canned.  My mom started some milk cooking on the stove and while she was out doing chores this evening, I made it into Queso Blanco (sp?) cheese----AKA: Vinegar cheese.  I also strained the finished batch of water kefir and started a new batch.  My mom baked bread.  Jacob shelled off all of the dried sweet corn we'd saved and I made some of it into Johnny Cake (a sweet cornbread).  My mom also made us some steak for supper and I put a buttercup squash in the oven also for the same purpose, so our kitchen was filled with tempting odors by the time Dad and Andrew got home.  :)

Okay, we make keifer a lot but what is water keifer? How do you make it and why do you use water instead of milk? Your right, either you love pickled beets or you hate them. We're divided in this house :)

EEEEWWWWW. Pickled beets. Kind of nasty. Pickling ruins food. No wait, I hate beets anyway. Oh well. :)

That is exactly what we said when we first heard of water kefir (which was 2 years ago at Prairie Days, although we didn't get grains and start making it until this year at Prairie Days). I'm looking for a good article to point you to on-line, but for now, I'll just say that, to my knowledge, it has the same health benefits as milk kefir, but is made with water instead. You also add sugar for the grains to feed on (like with kombucha), a few drops of liquid minerals, and some citrus fruit. That's how we were told to make it anyway, although I see some different variations out there in Internet land. We have made milk kefir in the past BUT nobody really liked it, so now we make water kefir. :)

Poor Hristiyan----you just don't know what's good. ;) Sorry, cousin, just have to tease you...
